It’s Hickory’s New Menu Time

It's Spring folks & that means it's time for our new menu.  Our smokehouse classics & BBQ favourites aren't going anywhere but Hickory's new menu means the return of some old dishes & some exciting new dishes & drinks.

We hit the road last November and 25 of our chefs, managers & pitmasters headed across the Atlantic for our second road trip of the year to the Southern States to bring back ideas, inspiration and authentic tastes & flavours. And, you get to experience it in our new menu - it's available now in all our Smokehouses.

Brunch Time...

Brunch has got to be the most fun & certainly the most sociable meal of the day & no-one does it better than the Southern States. Our Hickory's Muffins, fluffy Homemade Pancakes, HoneyBird Cinna-Bun & Chicken Fried Waffle aren't going anywhere.  But our new menu sees the introduction of the Dirty Fried Chicken Waffle.  Think a loaded sweet, sticky & savoury waffle with fried chicken, bacon jam & mac 'n' cheese.

 

If you're a fan of all things smokehouse the Pitmaster Stack muffin is calling your name. Inspired by the Deep South where pork & egg is on every brunch menu, we had to create a dish with our slow smoked BBQ pulled pork. The Hog & The Hen is a tribute to early mornings in Texas. Smoked pork collar & poached eggs on our homemade cornbread. Let us know what you think.

Pitmaster Stack

All washed down with mugs of bottomless cups of Joe coffee or if you're a fan of an iced coffee we've added a couple to the menu. We sipped many on our trips & had to create our favourite flavour from Atlanta Breakfast Club - Salted Maple. Or if fruit's more your thing go for Blueberry Iced Coffee. To complete the brunchin' line-up enjoy a Georgia Peach Iced Tea & it wouldn't be a Hickory's brunch without a Bloody Mary.

We serve our brunch menu everyday until 2pm.

Let's Get Things Started...

They're back... Brisket Popcorn Bites (aka Burnt Ends for all your long-standing Hickory's fans). You spoke & we listened. Well, we couldn't take it any longer. Smoky, mouth-watering, rich, tangy & a smokehouse institution. The good news is that the Smoky Bourbon Bacon Bites aren't going anywhere.

If you're after a light, fresh & zesty way to start your BBQ feast be sure to try the Deep South Shrimp Cocktail Tostadas. One to share for the table - the Charleston Corn Chips are a great sharer & we can get enough of the Pretzel Bites, Frickles & Smoked Wings.

Welcome to the Smokehouse...

Always smoked in house by our pitmasters our menu is still bursting with low 'n' slow barbecue. From the 16-hour Smoked Texas Style Brisket to the Memphis-Style Ribs & Eight Hour Smoked Beef Rib no trip to Hickory's is complete without enjoying something from the smokers.

Our pitmasters are going to be even busier as we've added a Smoked Bone-in-Pork Belly Rib - slow smoked for 6 hours then roasted & finished with our Korean inspired ketchup. Our advice...check out The Carnivore Skewer. House smoked chicken thighs, pork belly, Texas-style brisket & pork jalapeno & cheese hotlink sausages, finished with cowboy butter.

New Additions...

The Hickory's new menu also sees us raising the steaks. We know you enjoy your Rump Steak but next time try the New York Strip. This sirloin has bold flavours and is straight from grass-fed cattle & aged for 50 days.

But the new star of all things steak is The Texas Slab. This epic sharing 50oz  steak is the ultimate date night / mate night feast. Served with skin-on fries, onion rings, cowboy butter, magic-dusted field mushrooms, fire-kissed chillies & Hickory's pepper sauce.

It wouldn't be Spring without an extra salad. So the Gumbo makes way for the Watermelon  & Spiced Rice Salad. (Don't worry the Gumbo will be back in the Autumn). This colourful & fresh salad is one for a sunny day.

There are a few new sides to try too. Dirty Corn Ribs or Roast Garlic Buttered Sugar Snaps & Beans, and here's something to make you smile. Poutine Tots have returned.

Save Room For Dessert...

Nothing says Spring sunshine more than strawberries & cream. But we've done it Hickory's style. Jam Jar Cheesecake style! Crushed Oreo biscuits, creamy cheesecake & strawberry compote, topped with torched meringue and served with a churros. The Cookie Sandwich has had a makeover now. Our new Cookie Creation lets you enjoy it your way. You'll get three warm cookies with Fro-Co, toffee sauce, toffee & crunchie pieces and mini marshmallows so you can dip them, dunk them or load them, and make your very own cookie sandwich.

If you're a fan of Campfire Marshmallows we've raised the bar with the Hickory's new menu & our Campfire S'mores. You can still toast your marshmallows at the table, but they now come with s'mores biscuits for the ultimate sharing dessert.

From The Bar...

You've shown your love of the Freakshakes since we introduced them to the menu but we've shaken it up. Your new line-up still includes The Cookie Monster & the Crazy Carnival, and to complete the trio is the Mapleberry Muffin. They're all thick creamy & a little crazy - and there are smaller versions on the kids menu.

Our bartenders have been busy mixin' up some drinks that scream sunshine sippin'. We've taken a spicy Margarita & a Paloma to create the Paloma Spice. It's bitter, sweet & spicy and bursting with fruit flavours. If you're a fan of a sweet & sour cocktail how about Take Custardy. Complete with custard cream & a lollipop.

 

If you remember the Watermelon Sugar Soda we've given it a boozy twist & created a Watermelon Spritz. Refreshing,  zesty & sweet.

No booze. No problem - our homemade soda's are still here. (Don't forget our Grape Soda has been canned & you can take it home). And we've got some great tasting non-alc cocktails with the South Coco-Lina, The Strawberry State & Texas Red Fruit.
