Time for a New Menu

The nights are getting darker, the weather's on the turn, it’s officially Autumn folks. And that means it's time for a new menu. Our smokehouse classics & BBQ favourites aren't going anywhere but Hickory's new menu means the return of some old favourites and some exciting new dishes & drinks that are perfect for the season.
Brunch Time...
Brunch has got to be the most fun & certainly the most sociable meal of the day & no-one does it better than the Southern States. Our Hickory's Muffins, fluffy Homemade Pancakes, HoneyBird Cinna-Bun & Chicken Fried Waffle aren't going anywhere but our new menu sees the introduction of the Hot Honey Pork Burnt Ends Waffle. Think a loaded sweet, sticky & savoury waffle with our pork belly burnt ends, hot honey & mac 'n' cheese.
If you're a fan of all things smokehouse we’ve still got the epic Pitmaster Stack muffin calling your name. Inspired by the Deep South where pork & egg is on every brunch menu, we had keep this one on the menu. The Hog & The Hen has been reworked with a muffin- a tribute to early mornings in Texas- just how they should be!
Brunch drinkin'...
All washed down with mugs of bottomless cups of Joe coffee or if you're a fan of an iced coffee we've got a couple on the menu. But if tea’s more your thing, we’ve added a couple of new iced tea’s to our line-up with all new Cherry Blizzard & Waked ‘N’ Baked, all the autumnal vibes with this one. Baked apple, caramel, sweet tea, lemon juice & apple juice. To complete the brunchin' line-up, it wouldn't be a Hickory's brunch without a Bloody Mary. Our own tomato spice mix & vodka, topped with a taste of the smokehouse; maple bacon, savoury popcorn & celery- exactly as it should be done!
We serve our brunch menu everyday until 2pm.
Start things off strong...
They're back... Bourbon Glazed Chicken Wings. You spoke & we listened. We know you’ve been asking for these ones for a while, & we had to give in! Another autumn classic we just had to bring back, our South Louisiana Gumbo- love the heat? Add a splash of hot sauce to fire it up! Shrimp tostadas have been replaced with our Hot-Honey Fried Chicken Tacos. 3 soft corn tortillas loaded with fried chicken, green tomatillo salsa, coriander & pickled red onions.
If you're after a bit of everything to share for the table – our recommendation, get the Brisket Popcorn Bites- a great sharer, everyone will love & we can't get enough of the Pretzel Bites, Frickles & Smoked Wings.
Welcome to the Smokehouse...
Always smoked in house by our pitmasters our menu is still bursting with low 'n' slow barbecue. From the 16-hour Smoked Texas Style Brisket to the Memphis-Style Ribs & Eight Hour Smoked Beef Rib no trip to Hickory's is complete without enjoying something from the smokers.
Our pitmasters are going to be even busier as we've added 3 epic Barbecue Trays. Packed with picks from the smoker- for those that love a bit of variety in their life. Choose from Pig ‘n’ Chicks, Hog Heaven or The Carnivore. Inspired by the trays we’ve seen on our trips- we just had to create our own. The question is...which one will you try first?
Needing a smaller portion from the smokehouse? Our new Hand Helds are perfect- served straight up with pickles on the side. We’ve got The Hickory’s Hot Dog, Smoked Tennessee Brisket Sub & Smoky Pulled Chicken Sub. You choose the extras.
New Additions...
The Hickory's new menu also sees us raising the steaks. We know you enjoy your Rump Steak but next time try the New York Strip. This sirloin has bold flavours and is straight from grass-fed cattle & aged for 50 days.
Inspired by Cowtown USA, our epic new addition to the Steaks- The Cattleman’s Choice is the ultimate date night / mate night feast for 2. 6oz blackened rump steak, cowboy buttered 10oz sirloin steak, pepper sauce and a Tennessee gravy glazed 8hr smoked beef rib. Served with mac ‘n’ cheese, skin-on fries, pickles & house slaw. Served with skin-on fries, Hickory's pepper sauce, fire-kissed chilli & magic-dusted field mushroom. Our advice, arrive hungry!
We’ve even changed up our fajitas- we’ve bought back an old favourite – Blackened Butt Steak Fajitas & added the Hot- Honey Pork Burnt Ends Fajitas too- trust us- it works!
It wouldn't be autumn without our Gumbo, This spicy Louisiana style stew is one not to be missed & regular guests cry out for it’s return each year. Choose from Smoked Pulled Chicken & Pork Jalapeño Sausage or our South Louisiana Roast Okra.
Of course, we’ll always have The Smokehouse Platter- All your favourites for when you want to try everything from the smoker. The ultimate smokehouse experience.
Onion rings have bid us farewell, but we’re saying hello to our new bit on the side- the Southern Fried Onion Blossom. Perfect for sharing & trust us, it’s incredible!
Save Room For Dessert...
Nothing says autumn more than "Apple Pie". But we've done it Hickory's style. Jam Jar Cheesecake style! Layers of vanilla cheesecake, custard, crushed cinnamon apples & cookie crumble served with cinnamon sugar-coated churros sticks. Perfect for warming up, our Cherry Pie Deep Dish Pan Cake will not disappoint. An American style Pan Cake, topped with black cherry, cookie crumble & our frozen custard, dusted with cinnamon sugar.
For the Fro- Co lover- we’ve added an all new American Screwball to the line-up. Think stars, stripes and all things nice with this epic sweet- treat!
From The Bar...
You've shown your love of the Freakshakes since we introduced them to the menu & they’re going nowhere. It’s a shake showdown… you choose your favourite- The Cookie Monster & the Crazy Carnival. They're thick, creamy & a little crazy - and there are smaller versions on the kids menu.
Our bartenders have been busy mixin' up drinks at our annual cocktail competition, with the chance for their drink to be in the menu. Created by our very own winning bartender Alex Davies from our Wrexham smokehouse, you just have to try How Momma Made It. Inspired by his Mother's own blackberry & apple pie recipe. Mellow Corn Straight Corn whiskey, winter berry syrup buttery cinnamon, apple liqueur & a blackberry pie.
It may not be summer anymore, but we’re still clinging on to the Southern Spritz, we’ve added 2 new ones to the line-up alongside The Grape Escape. Rainbow Road & Our Baked Apple Spritz. JD Apple, Drambuie, citrus, baked apple syrup, cinnamon, topped with ginger ale.
Margaritas have had a makeover!
The Pitmaster Margarita is as smokin’ as it sounds… inspired by the guys in our smoker rooms, our bartenders have created this incredible Marg! Or, fancy a flavour? We’ve added Strawberry & Coconut options. Of course, we’ve still got the classic on there- which will you go for? Tough choice… someone’s gotta make it!
No booze. No problem - our homemade soda's are still here. (Don't forget our Grape Soda has been canned & you can take it home). And we've got some great tasting non-alc cocktails with the Bubble Blue Cooler, Smart & Stormy and The Strawberry State.
That's not it! We've also added Bodega Run to our beers list for a true taste of the states! A harmonious fusion of flavors, a medley of citrus, floral & woody notes.
