This year, we’re inviting you to experience BBQ the way it’s meant to be. Through the journeys that inspired it, the craft that defines it, the plates we serve, and the people who bring it all to life. Because you don’t just eat BBQ, you experience it!

Every dish we serve has a starting point, and more often than not, it begins somewhere deep in the American South. A roadside smokehouse in Texas. A hidden gem tucked down a side street. A recommendation from a local who knows their BBQ better than anyone.

Through the years, we’ve travelled thousands of miles chasing those moments. Over 26 trips to over 80 towns and cities. Not just to taste great food, but to understand it. Where it comes from, how it’s made, and why it matters so much to the people who serve it.

From sticky ribs in Memphis to bold, bark-crusted brisket in Texas, every stop has shaped what you see on our menu today. And this BBQ Month, we’re bringing those stories front and centre, so you can taste the journey in every bite.
The Craft: Low ‘n’ Slow
It's not just our stories and inspiration that comes from the Southern states, our smokers do too. Our legendary Southern Pride and Ole Hickory smokers, that are at the heart of all of our Smokehouses, are shipped straight from the heartlands of American barbecue - Tennessee & Missouri.
But it takes more than the equipment to make great BBQ. It’s early mornings & late nights. It's patience, precision, and knowing exactly when something’s just right. And it's the care that goes into every single cut of meat.

Our pitmasters live & breathe this craft. As we like to say, not all hero's wear capes, some wear aprons! From low temperatures to long & steady smokes that allow tough cuts to break down slowly. The process, that we've learnt & developed over the years with tips from trips to the deep south, turns each cut into something tender, juicy, and deeply flavoured.
During BBQ Month, we’re lifting the lid on the pit. Sharing more of what goes on behind the scenes & celebrating the true skill that makes BBQ what it is. Because when you know the craft, you appreciate every bite that little bit more.
From the States to Your Plate
Our menu is more than a collection of dishes - it’s a scrapbook of our travels. Some dishes come straight from places we’ve visited. Others are inspired by flavours we couldn’t forget. And a few are born from those “you had to be there” moments that stayed with us long after the trip ended.

Our Memphis-style ribs? Inspired by the dry-rubbed, smoke-kissed classics we fell in love with on Beale Street. Our 16-hour Texas brisket? A nod to the no-nonsense, salt-and-pepper traditions of Central Texas, where the meat does all the talking. That rich, tangy Carolina influence? You’ll find it woven through dishes that bring a little sharpness and bite to balance out the smoke. And the deeper, spicier notes across parts of the menu? That’s Louisiana - where bold flavour, seasoning, and soul come together in every dish.

Even our Smokehouse Platter & Barbecue Trays are built around how BBQ is meant to be enjoyed in the South - laid out, passed around, and shared with good company.
